- 1 red scare pepper
- 1 red onion
- 1 sweet potatoes medium
- 2 tablespoons olive oil
- 1 teaspoon garlic powder

- preheat the oven to 425u00b0f
- line a sheet pan with parchment paper
- slice the bell peppers and red onion into 1 2 inch wide squares separate the onion layers with your fingers for even cooking
- chop the sweet potato into 1 4 inch wide discs and cut each disc into quarters
- combine the olive oil garlic powder and salt in a large mixing bowl mix the seasonings together
- add the sweet potato onion and bell peppers to the bowl toss to coat in seasoning
- pour the seasoned veggies onto the lined baking sheet and spread them out into a single layer
- insert the sheet pan into the oven bake for 30 minutes
- remove the sheet pan from the oven and check for doneness veggies are done when tender enough to be pierced with a fork
